| Chicken Pie
2 cups of diced cooked chicken 2 cups of chicken broth 3 tablespoons of flour 1/2 teaspoon of salt 1/8 teaspoon of pepper Pie Crust |

Cut the chicken into bite size pieces. You may use leftover chicken that has been frozen or cooked chicken parts such as wings, backs and pieces that we don't use for frying. Put the chicken in a shallow pyrex dish. Mix salt, pepper, flour and broth together. If you don't have broth from a cooked chicken, you can make broth by using 1 1/2 heaping tablespoons of chicken soup base and 3 cups of water. Pour broth over chicken. Cover with pastry and bake in 375ºF. oven for 45 minutes or until crusts is golden brown. Use pie crust recipe in this book. It may be made ahead and frozen. Serves 10 |
