Chicken Sorrento

3 pounds of chicken pieces
flour seasoned with salt and pepper
3 tablespoons of vegetable oil
1/3 cup of rice
1 large onion
1 orange, cut in half and seeded but not peeled
1/2 cup of milk
1 cup of water
3 tablespoons of chopped pimento
1/4 teaspoon of thyme
1/8 teaspoon of sugar
1/8 teaspoon of cayenne pepper

Coat chicken pieces with seasoned flour. Heat oil in large frying pan and brown chicken on all sides. Remove chicken from pan and set aside. Add rice to pan, stirring over low heat until rice is golden brown.
Preheat oven to 350ºF. Put onions and unpeeled orange through a food grinder, using the coarse blade. Mix rice with onion and orange mixture, then place in casserole dish. Arrange chicken pieces on top of mixture. Add remaining ingredients.
Cover and bake for 1 to 1 1/4 hours. Adjust seasoning before serving.
