Chicken & Vegetable Casserole

3 pounds of chicken pieces
Flour seasoned with salt and pepper
1/4 pound of salt pork, cut into small pieces
1/4 teaspoon of thyme
1/8 teaspoon of marjoram
1 1/2 cups of sliced carrots
1 cup of small white onions, peeled
1 1/2 cups of diced potatoes
1 cup of sliced mushrooms
1/2 bay leaf
1 sprig parsley
1 clove garlic, peeled and crushed
1 1/2 cups of boiling water
Salt and pepper to taste

Preheat oven to 350ºF.  Coat chicken with seasoned flour. Place salt pork in frying pan and cook until crisp to make crackling. Remove pieces of crackling from pan.
Brown chicken on all sides in pork fat. Place in casserole dish.
Add remaining ingredients and crisp pieces of pork to chicken. Cover and cook in oven for 1 1/4 hours. Season with salt and pepper. Remove bay leaf and serve. Serves 5 to 6
