Chicken Hedgehogs

1/2 pound of boneless chicken breasts, cubed
1 egg
3 tablespoons of flour
2 teaspoons of sugar
2 teaspoons of light soy sauce
2 teaspoons of dry sherry
1/4 teaspoon of salt
1 1/4 cups of rice vermicelli

Place the chicken cubes in food processor container. Add egg, flour, sugar, soy sauce, sherry and salt. Process until smooth paste forms, then transfer mixture to bowl. Cover with plastic wrap and chill for 20 minutes. Form mixture into 18 balls. Finely crush vermicelli. Roll each ball in vermicelli until well coated. Heat about 1 inch of cooking oil in wok or frying pan. Fry 6 chicken balls at a time for 3 minutes or until golden and thoroughly cooked. Drain well and serve warm with soy sauce or sweet chili sauce. Serves 8 - 10.
