| Cornish Hens w/Pineapple Pepper Sauce
3 (1 to 1 1/2 pound) Cornish game hens 2 tablespoons of cornstarch 1 teaspoon of dry mustard 1 medium red bell pepper, cut into 1 inch pieces, if desired 1 medium green pepper, cut into 1 inch pieces 1/2 cup of water 2 tablespoons of red wine vinegar 1 to 3 teaspoons of honey 1 teaspoon of soy sauce 8 ounce can of chunk pineapple in its own juice, undrained |

Remove giblets, rinse hens and pat dry. Halve each hen. Place skin side up on rack in broiler pan or shallow pan. Broil 4 to 6 inches from heat for 8 to 10 minutes or until skin is crisp, drain. Heat oven to 325ºF. Place halves skin side up in 13 x 9 inch baking dish. In medium bowl, combine the remaining ingredients, spoon over hens.
