Cornish Hens w/Pineapple Pepper Sauce

3 (1 to 1 1/2 pound) Cornish game hens
2 tablespoons of cornstarch
1 teaspoon of dry mustard
1 medium red bell pepper, cut into 1 inch pieces, if desired
1 medium green pepper, cut into 1 inch pieces
1/2 cup of water
2 tablespoons of red wine vinegar
1 to 3 teaspoons of honey
1 teaspoon of soy sauce
8 ounce can of chunk pineapple in its own juice, undrained

Remove giblets, rinse hens and pat dry. Halve each hen. Place skin side up on rack in broiler pan or shallow pan. Broil 4 to 6 inches from heat for 8 to 10 minutes or until skin is crisp, drain. Heat oven to 325ºF. Place halves skin side up in 13 x 9 inch baking dish. In medium bowl, combine the remaining ingredients, spoon over hens. Bake at 325ºF. for 45 to 50 minutes or until tender, basting occasionally. Makes 6 servings
