Deep Fried Chicken

1/2 cup of flour
2 teaspoons of salt
2 eggs
5 tablespoons of water, preferably mineral water
4 cups of safflower oil
3 pounds of chicken pieces
Freshly ground black pepper to taste

Mix the flour, salt, eggs and water together to make batter. Cover and let stand for 20 minutes. Heat oil to 350ºF. in skillet deep fryer. Heat oven to 200ºF. Dip each chicken piece in batter. Fry chicken, a few pieces at a time in oil until crisp and brown all over. Drain on paper towels, then keep warm in oven while remaining chicken is fried. Season with salt and pepper and serve. Serves 4
