| Ginger Chicken with Pears
1 to 1 1/3 boneless chicken breasts 1 - 2 tablespoons of freshly grated ginger 1/4 teaspoon of black pepper 1/4 teaspoon of garlic powder 1/4 teaspoon of ground cloves 2 pears, cored and sliced in long wedges 2 cloves garlic, crushed juice of one lemon 1/2 cup of sherry 1/2 cup of currants 1 1/2 teaspoons of butter 1 tablespoon of cornstarch 1/2 cup of orange juice
Cut the chicken in strips and rub with ginger, pepper, garlic powder and cloves. Combine the chicken, pears, garlic, lemon juice, sherry and currants. Marinate for several hours or overnight. Heat butter and sauté the chicken pieces until browned on each side. Add marinade and cover. Simmer for about 10 minutes or until chicken and pears are done. Remove chicken and pears to serving platter. Mix the cornstarch and orange juice until smooth. Add to pan and stir until sauce has thickened. Pour over chicken and pears. Serves 4
