Glazed Baked Chicken

two 2 1/2 pound frying chickens, halved
2 teaspoons of vegetable oil
2 tablespoons of honey
1 tablespoon of moderately hot mustard
2 teaspoons of curry powder
1/2 teaspoon of salt

Preheat oven to 425ºF. Cut 4 pieces of aluminum foil large enough to wrap each chicken half. Brush chicken halves with oil and lay, cut side down on foil. Combine the honey with mustard, curry powder and salt, brush chicken with this mixture. wrap foil loosely around chicken halves, sealing edges well. Place foil parcels on roasting rack and bake for 30 minutes in center of oven. Open foil and continue to cook for 20 minutes longer, until skin is crisp and brown,. Place each foil parcel on individual serving plate, remove foil before serving. Serves 4
