| Grilled Jerked Chicken
8 boneless, skinless chicken breasts
Marinade: 1/2 cup of white vinegar 2 tablespoons of vegetable oil 1/4 cup of soy sauce 1 teaspoon of allspice 1/2 teaspoon of ground nutmeg 1/2 teaspoon of ground cinnamon 1/2 teaspoon of garlic salt 1 teaspoon of salt 1/2 cup of scallions, chopped 4 jalapeno chili peppers, stems removed (remove seeds for milder flavor)
Place all of the marinade ingredients into a blender on high speed until completely liquefied. Place chicken breasts in a non-metallic bowl, cover with marinade. Refrigerate overnight. Grill chicken about 4 minutes on each side, basting frequently. Serves 4. |
