Japanese Fried Chicken

1/4 cup of soy sauce
2 teaspoons of mirin or sherry mixed with 1 teaspoon sugar
Juice of 1 lemon
Salt to taste
Paprika to taste
1/4 cup of cornstarch
Oil for deep frying
One 2 1/2 to 3 pound chicken, cut into pieces 

Mix the soy sauce, mirin, lemon juice, salt, and paprika. Pour over chicken and marinate for at least 2 hours. Remove the chicken from the marinade, discard marinade. Sprinkle the chicken with cornstarch until well coated. Heat oil in wok or deep skillet over medium high heat. Fry the chicken for 15 to 20 minutes or until the chicken is nicely browned. Drain on paper towels and serve. Serves 4
