| Chicken Fajitas
2 pounds of chicken breasts 1 cup of green bell pepper, sliced 1 cup of red bell pepper, sliced 1 cup of onion, sliced 2 tablespoons of butter 2 tablespoons of fajita seasoning 4 ounces of cheddar cheese, grated
Cut chicken breast into long thin slices. In a large skillet, sauté peppers, onions and fajita seasoning in butter until tender. Remove from skillet. In same skillet, cook chicken slices until cooked through (about 3 to 5 minutes). Add peppers and onion mix, to reheat. Remove from heat and place on serving platter. Sprinkle cheese over meat; serve with sour cream and guacamole. Serves 4. |
