Barbecued Lemon Chicken

4 boneless chicken breasts
juice of 1 lemon
2 teaspoons of olive oil
1 clove garlic, minced
1/2 teaspoon of dried oregano
a pinch of cayenne pepper

Cut any visible fat from chicken and remove skin. In shallow dish, arrange chicken in single layer. In a small dish, combine lemon juice, oil, garlic, oregano and cayenne, mix well. Pour over chicken and turn to coat both sides. Let stand at room temperature for 20 minutes or cover and refrigerate overnight.
On a greased grill, cook chicken over hot coals for 4 to 5 minutes on each side or until meat is no longer pink inside. Makes 4 servings
