2 cloves garlic, chopped 4 tablespoons of olive oil one 3 pound chicken, cut up 2 tomatoes, peeled 2 large pimentos, chopped 12 stuffed olives, halved 1/2 teaspoon of salt 1/4 teaspoon of pepper 1/3 cup of tomato juice
Brown garlic in hot oil, add chicken and brown. Stir in tomatoes and pimentos, cook for 10 minutes. Add olives, salt, pepper and tomato juice, cover and simmer for 1 hour. Serve with steamed rice. 6 servings |
