Pretzel Crusted Chicken
one 6.5 ounce container of pretzel twists 5 slices of bacon, cooked 1/2 cup of grated Parmesan cheese 2 teaspoons of dried parsley flakes 1/3 cup of all purpose flour 1 teaspoon of paprika 1 teaspoon of salt 1/4 teaspoon of pepper 1/4 teaspoon of ground ginger 1/2 cup of beer 1 large egg, lightly beaten 3 pounds of chicken pieces
Position knife blade in food processor bowl, add first 4 ingredients. Process until pretzels resemble fine crumbs. Place in a large heavy duty zip lock plastic bag, set aside. Combine the flour and next 4 ingredients in a medium bowl. Stir in beer and egg. Dip chicken pieces, one at a time, in batter, place in bag of pretzel mixture, shaking to coat. Place on a lightly greased baking sheet. Bake at 350ºF. for 1 hour or until done. 4 servings
