| Roasters with Parsley Rice
1 box of wild and long grain rice 1/4 cup of chopped parsley 2 roaster chickens salt and pepper to taste
Cook the rice according to package directions, then stir in the parsley. Stuff the chickens lightly with the rice and place in a greased baking pan with a small amount of water. Sprinkle with salt and pepper. Bake, uncovered, at 350ºF. for 1 hour. Uncover and bake 30 minutes longer or until tender.
