Roast Goose w/Apple Stuffing

One 10 pound ready to cook goose
1/2 cup of gin
One 13 1/2 ounce can of chicken broth
Stuffing:
8 - 10 apples, peeled and chopped
1 loaf of stale bread, broken into small pieces
3 medium onions, finely chopped
4 tablespoons of melted butter
Poultry seasoning
2 eggs, well beaten
1/4 cup of gin
Salt and pepper to taste

Stuff the goose with a mixture of all stuffing ingredients, truss. Place breast side up on a rack in roasting pan and prick skin in fat layer around legs and wings. Pour the gin and chicken broth over goose. Place in a 500ºF. oven and roast for 2 hours, basting frequently and removing fat from the pan. Turn breast up again and roast for about 2 hours longer or for a total roasting time of 25 minutes per pound. Makes 8 servings
