Skillet Chicken in Orange Sauce
1/3 cup of butter or margarine 3 pounds of chicken thighs 1/4 cup of all purpose flour 2 tablespoons of brown sugar 1 teaspoon of salt 1/2 teaspoon of ground ginger 1/8 teaspoon of pepper 1 cup of orange juice 1/4 cup of water 2 medium oranges, peeled and sliced Hot cooked rice
Melt butter in a large skillet over medium heat. Add chicken to skillet, and brown on all sides. Remove chicken from skillet and set aside, reserve drippings in skillet. Combine flour and the next 4 ingredients, and stir into pan drippings. Cook over medium high heat, stirring mixture constantly for 1 minute. Gradually stir in orange juice and water. Bring mixture to a boil, add chicken. Cover and simmer for 25 minutes. Place orange slices on top of chicken. Cover and simmer 10 minutes or until chicken is done. Serve over rice. 4 servings |
