| Spiced Coconut Chicken
1 chicken, de-boned 1 cup of onion, chopped 1 can of coconut milk, unsweetened 1 packet of Sweet 'n Low sweetener 1 tablespoon of ghee, or butter 2 tablespoons of ginger, grated 1 tablespoon of coriander seed, ground 1 teaspoon of cumin, ground 1/2 teaspoon of black pepper 1/2 teaspoon of salt 1/4 teaspoon of chili powder 1/2 teaspoon of turmeric 1/4 teaspoon of clove, ground 1 teaspoon of lemon juice 1 bunch of cilantro, chopped
Cut up chicken into bite-sized pieces. Mix dry seasonings together. In large skillet over medium-high heat, sauté in ghee the seasonings and onions for 1 minute. Add lime juice and ginger, cook while stirring for 1 minute. Add chicken; cook, stirring frequently for 5 minutes. Add coconut milk, sweetener, and cilantro, reduce heat to medium low. Cook for 15 minutes; do not bring to a boil. Serves 3. |
