| Spicy Chicken
8 boneless skinless chicken breast halves 1 cup of chopped chives 1/4 cup of fresh thyme leaves 2 tablespoons of olive oil 1 tablespoon of freshly ground pepper 1 tablespoon of freshly ground coriander seeds 3 tablespoons of grated peeled gingerroot 2 tablespoons of fresh lime juice 2 teaspoons of salt 2 teaspoons of freshly ground allspice 1 teaspoon of freshly ground nutmeg 1 teaspoon of ground cinnamon 2 cloves garlic, peeled and halved 3 bay leaves
Place chicken in a large, shallow nonstick baking pan and set aside. Put all the remaining ingredients into the container of a blender or food processor and process until a paste forms. If it becomes too thick, add a drop or two of olive oil until a rubbing consistency is obtained. Rub this paste over both sides of the chicken breasts. Cover and refrigerate 2 to 45 hours. Preheat oven to 375ºF. Place the baking pan in the oven and bake chicken for 45 minutes or until done, turning occasionally and basting. remove bay leaves. Serve hot. Serves 8
