Apple & Turkey Salad
1 cup of long grain brown rice 1/2 teaspoon of salt 1/2 teaspoon of curry powder 3 cups of water 3 boneless turkey breasts Juice of 1/2 lemon 1/8 teaspoon of pepper 1 large apple, peeled, cored and sliced 2 tablespoons of sour cream 2 tablespoons of sesame oil 2 tablespoons of lemon juice 1/4 cup of chicken stock with all fat removed 1/4 cup of sesame seeds 2 tablespoons of chopped fresh dill for garnish Lettuce leaves
Place rice in saucepan with 1/4 teaspoon of salt, 1/4 teaspoon of curry powder, and water. Cover and cook over low heat for 35 minutes. Sprinkle turkey with lemon juice and pepper. Lay turkey on top of rice during the last 20 minutes of cooking time, turning over after 10 minutes. Drain rice. Cut turkey into strips. Set a few apple slices aside and sprinkle with lemon juice. Chop remaining slices and combine with rice, turkey strips, sour cream, sesame oil, lemon juice, chicken stock, and remaining salt and curry powder. Heat dry frying pan. Place sesame seeds in pan and toast, stirring well, until browned. To serve, arrange rice salad on serving plate, sprinkle with sesame seeds and garnish with dill, lettuce and reserved fruit slices. Serves 4
