Smoked Turkey Salad
3/4 teaspoon of salt 1/4 teaspoon of pepper 1 teaspoon of dried mustard 1 1/2 teaspoons of sugar 1 egg 3/4 cup of salad oil 1 teaspoon of lemon juice 1 teaspoon of wine vinegar 1 to 2 tablespoons of boiling water 1/2 pound of egg noodles 3 to 4 tablespoons of light cream 1 pound of smoked turkey breast, thinly sliced 1/2 cup of cooked corn and pimento 2 to 3 lettuce hearts 3 to 4 tomatoes, skinned and quartered
Place salt, pepper, mustard and sugar in blender or food processor. Add egg. Mix thoroughly at low speed. Add a few drops of oil and mix well. Add the remaining oil in steady stream until it has been absorbed and mayonnaise is very thick. Add lemon juice, vinegar, and boiling water. Boil noodles in salted water following package directions; drain and cool. Add cream to mayonnaise mixture. Toss cooled vegetables with two-thirds of mayonnaise mixture and season to taste. Place turkey slices on top of noodles in neat row. Mix corn and pimento with small amount of remaining mayonnaise. Garnish turkey with lettuce hearts, tomatoes and corn and pimento. Serves 4 to 6
