Turkey Brochettes
1/2 cup of white wine 1/4 cup of olive oil 1 clove garlic, peeled and crushed 1/2 teaspoon of sage 2 pounds of turkey cutlets cut into 1 1/2 inch cubes 1 pound of Italian sweet sausage links 24 mushroom caps 2 green peppers, seeded and cut into chunks
Combine wine, oil, garlic, and sage in glass bowl, mix well. Add turkey, cover and let marinade for 1 hour. Prick sausages. Simmer in water to cover for 15 minutes. drain: cool. Cut each sausage into 1 1/2 inch pieces. Preheat broiler or heat coals in outdoor grill Grease 6 skewers. Alternately thread turkey, sausage and vegetables on skewers. Broil or grill brochettes about 8 inches from heat for 20 minutes or until meats are thoroughly cooked. Baste occasionally with marinade. Place brochettes on platter: discard leftover marinade. Serve with rice or noodles. Serves 6 |
