Turkey Nut Salad
1/2 cup of seedless grapes 3 to 4 tablespoons of almonds Juice of 1/2 lemon Grated rind of 1/2 orange 1 cup of mayonnaise 2 cups of diced cooked turkey 1/2 cup of sliced celery Lettuce or endive leaves 1/2 teaspoon of paprika
Dip grapes first in boiling water for about 10 seconds, then in cold water; peel. quickly dip almonds in and out of boiling water, remove skins, halve, and brown in moderate oven (350ºF.) for 2 minutes. Add lemon juice and orange rind to mayonnaise. Toss turkey, peeled grapes, celery, and almonds in mayonnaise. Arrange turkey mixture on lettuce or endive leaves. Sprinkle with paprika, then serve. Serves 4
