Turkey & Pomegranate Salad
2 cups of diced cooked turkey 2 to 3 stalks celery, chopped Seeds from 1 large, ripe pomegranate 1 cup of chopped blanched almonds salt and pepper to taste Mayonnaise Lettuce Leaves 2 slices of pineapple, cut into wedges
Combine turkey, celery, pomegranate seeds and almonds. Season with salt and pepper. Add just enough mayonnaise to moisten. Toss salad lightly. Serve on a bed of lettuce. Garnish with pineapple wedges. Serves 5 to 6
