| Turkey with Peppers & Potatoes
1 pound of turkey tenderloins juice of 1 lime garlic powder ground pepper to taste 1 small onion, grated 1 red pepper, finely chopped 4 small potatoes, peeled and grated 2 tablespoons of extra virgin olive oil 3 cloves garlic, crushed 1 ounce of Swiss cheese, grated
In an oiled baking dish spread turkey pieces. Sprinkle with lime juice, garlic powder, and ground pepper. Spread onions and peppers on top of each turkey slice. Mix grated potatoes with ground pepper, olive oil and garlic. Pile on top of turkey, covering vegetables carefully. Bake in a hot oven, about 475ºF. for 25 minutes. Check frequently to see that it is browning nicely. Sprinkle with cheese and place under broiler for a few minutes to complete browning. Serves 4
