| Corn with Cilantro & Chives
3 ears of fresh corn 1 tablespoon of unsalted butter 1/2 cup of tightly packed cilantro leaves, chopped 1/4 cup of snipped chives salt and freshly ground pepper
Fill a deep, medium skillet with water to a depth of 3/4" cover, and bring to a boil over high heat. Add the corn, cover, and steam until tender crisp, 3 to 4 minutes. Transfer the corn to a plate. when cool enough to handle, stand each ear in the center of a work surface and slice off the kernels. In a medium skillet, melt the butter over medium heat. Mix in the corn and stir until the kernels are heated through. Off the heat, mix in the cilantro and chives. Season to taste with salt and pepper. Serve hot, warm or at room temperature. Makes 4 servings
