| Corn Oysters
1 1/2 cups of corn kernels 2 eggs 1/4 cup of all purpose flour 1/2 teaspoon of salt 1/8 teaspoon of pepper 4 tablespoons of butter or margarine
In a medium bowl, combine all ingredients except butter, mix well. In a 10 inch skillet over medium heat, heat 2 tablespoons of butter. Drop 1/2 of the corn mixture by rounded tablespoonfuls into butter to make 6 "oysters" cook until browned on both sides, turning once. Repeat with remaining butter and corn mixture. Serve at once. Yields 12
