| Italian Meatball Stew
1 1/2 pounds of extra lean ground beef 1/2 cup of fine dry bread crumbs 2 eggs, slightly beaten 1/4 cup of milk 2 tablespoons of grated Parmesan cheese 1/2 teaspoon of pepper 1 clove garlic, crushed one 6 ounce can of tomato paste 2 cups of beef broth 1/2 teaspoon of seasoned salt 1/2 teaspoon of dried oregano, crushed 1/2 teaspoon of dried basil, crushed one 16 ounce package of frozen Italian style vegetables, cooked and drained
In a large bowl, combine beef with bread crumbs, eggs, milk, cheese, salt, pepper and garlic. form into 2 inch balls. Place meatballs in bottom of slow cooker. Combine tomato paste, broth, seasoned salt, oregano and basil. Pour mixture over meat. Cover and cook on Low 4 1//2 to 5 hours. Stir in cooked vegetables. Cover and cook on HIGH 10 to 15 minutes or until mixture is hot. Makes 5 or 6 servings |
