2 medium zucchini one 16 ounce can of stewed tomatoes with juice 1 small onion, chopped 1 cup of cooked whole kernel corn one 4 ounce can of roasted green chiles, chopped 1 teaspoon of dried oregano 1/2 teaspoon of sugar salt and pepper |

Cut the zucchini into 3/4 inch pieces. Combine all ingredients in a slow cooker. Cover and cook on HIGH 2 to 3 hours or until zucchini is tender. Season with salt and pepper to taste. Makes 5 - 6 servings
