| Creole Zucchini
2 pounds of zucchini 1 small green bell pepper, chopped 1 small onion, chopped 1 clove garlic, minced 1 teaspoon of salt 1/4 teaspoon of pepper 4 tomatoes, peeled and chopped 2 tablespoons of margarine or butter 2 tablespoons of minced fresh parsley |

Cut zucchini into 1/4 inch slices. In a slow cooker, combine zucchini, bell pepper, onion, garlic salt and pepper. Top with chopped tomatoes, then margarine or butter. Cover and cook on HIGH about 2 hours or until zucchini is tender. Sprinkle with chopped parsley. Makes 6 or 7 servings
