| Easy Lamb & Potato Bake
Nonstick cooking spray 4 lamb shoulder blade chops or leg steaks, 3/4 inch thick (1 1/2 pounds(, trimmed 2 tablespoons of cornmeal 4 teaspoons of water 1 tablespoon of prepared mustard one 5 ounce package of scalloped potato mixture 1 teaspoon of caraway seeds |

Spray a large skillet with nonstick spray. Brown lamb over medium high heat about 5 minutes on each side. In a small bowl, combine cornmeal, water and mustard; mix well. In 8x8x2 inch baking dish, prepare scalloped potato mix according to package directions, omitting margarine and adding caraway seeds. Spread mustard mixture on surface of browned chops; place mustard side up on top of potato mixture. Bake, uncovered, in 400ºF. oven about 35 minutes or until lightly browned. Remove from oven; let stand 5 minutes. Serve with steamed green vegetables or crisp green salad. Makes 4 servings
