| Nana's Rice Pudding
2/3 cup of uncooked long grain rice 1 1/3 cups of water 2 cups of milk 2 tablespoons of margarine or butter 1/4 teaspoon of salt 1/3 cup of sugar 2 eggs, beaten 1 teaspoon of vanilla extract 3/4 cup of raisins ground cinnamon
Place a metal rack or trivet in a slow cooker. Grease a 5 or 6 cup baking dish. Cook rice according to package directions using 1 1/3 cups of water. Combine cooked rice with milk, margarine or butter, salt, sugar, eggs, vanilla and raisins. Pour into prepared baking dish. Cover baking dish with foil. Add 1 cup hot water to slow cooker. Place baking dish on trivet. Cover and cook on HIGH 4 hours. Sprinkle with cinnamon. Serve warm. Refrigerate any leftovers and serve chilled. Makes 6 to 8 servings |
