| Orange Prune Compote
1 pound of pitted dried prunes 3 cups of water two 11 ounce cans of mandarin oranges, drained 1/3 cup of sugar 1/4 cup of Cointreau or Curacao 1/2 cup of orange juice 2 bananas, sliced
Combine prunes with water in a slow cooker. Cover and cook on LOW 2 to 2 1/2 hours. Cool and drain. Combine with mandarin oranges, sugar, Cointreau and orange juice. Cover and refrigerate several hours before serving. Just before serving stir in bananas. Makes 8 to 10 servings
