Pepper Jelly

1/2 to 3/4 cup of hot red peppers, seeded and chopped
1 green pepper, seeded and chopped
1/2 cup of vinegar
6 1/2 cups of sugar
1 1/4 cups of vinegar
6 ounces of Certo
2 teaspoons of food coloring (red or green)

Place seeded and chopped peppers into blender with 1/2 cup of vinegar and blend well. Make syrup of sugar and 1 1/4 cups of vinegar by bringing mixture slowly to a boil and cooking until the sugar is dissolved. Then add pepper mixture. Cook for 5 minutes, stirring constantly. Add Certo and food coloring. Pour into hot, sterilized jars and seal with wax. Makes 3 to 3 1/2 pints.
