| | Caraway Vegetable Dip
3/4 cup of cream style cottage cheese 3 tablespoons of mayonnaise 2 medium carrots, scraped and cut into 1/2 inch pieces 3 radishes, chopped 1 tablespoon of caraway seeds 1/2 teaspoon of salt 1/4 teaspoon of pepper Additional caraway seeds Fresh broccoli flowerets
Combine cottage cheese and mayonnaise in container of an electric blender or food processor bowl; process until smooth. Add carrots, radishes, caraway seeds, salt and pepper; process 30 seconds or until well blended. Spoon mixture into a serving bowl. Cover; chill thoroughly. Sprinkle dip with additional caraway seeds, and serve with fresh broccoli flowerets. Yield: about 1 1/2 cups. |
