| Guacamole
2 large ripe avocados, peeled and cut into chunks 1 small onion, chopped Juice of 1 lemon 4 drops of hot pepper oil 1 small tomato, seeded and chopped 2 garlic cloves, minced Optional: 1/2 jalapeno pepper, finely chopped - 2 tablespoons of finely chopped cilantro
Combine all ingredients in a blender or food processor including pepper and cilantro if you wish, and puree. Or mash ingredients in a bowl with a fork. Leave the avocado pit in mixture until serving to keep it from discoloring. Makes about 2 cups
