| Heavenly Garlic Dip
2 bulbs of garlic 6 tablespoons of olive oil 1 small onion, finely chopped 2 tablespoons of lemon juice 3 tablespoons of tahini 2 tablespoons of chopped fresh parsley salt and pepper fresh vegetable crudités, French bread or warmed pocket breads to serve
Separate the bulbs of garlic into individual cloves. Place them on a cookie sheet and roast in a preheated oven 400ºF/200ºC, for 8 - 10 minutes. Set them aside to cool for a few minutes. When they are cool enough to handle, peel the garlic cloves and then chop them finely. Heat the olive oil in a pan or skillet and add the garlic and onion. Sauté over low heat, stirring occasionally, for 8 - 10 minutes, until soft. Remove the pan from the heat. Mix in the lemon juice, tahini and parsley. Season to taste with salt and pepper. Transfer the dip to a small heatproof bowl and keep warm at one side on the barbecue grill. Serve with fresh vegetables crudités or with chunks of French bread or warm pocket breads. serves 4
