Cucumber Salad Dressing (.5 Pts)

2 ounces of firm tofu drained
1 cup of coarsely chopped unpeeled cucumber
2 tablespoons of fresh lemon juice
2 teaspoons of sugar
1 teaspoon of vegetable oil
1/2 teaspoon of salt
1/4 teaspoon of dark sesame oil
1/8 teaspoon of ground red pepper

Place all ingredients in a food processor; process until smooth.

Yield: 1 cup (serving size: 2 tablespoons).
