| Tarragon Oil Dressing
1/2 cup of olive or salad oil 3 tablespoons of tarragon vinegar 2 tablespoons of lemon juice 1 teaspoon of Dijon style mustard 1 clove garlic, minced 1/8 teaspoon of salt a dash of pepper fresh greens
In a screw top jar, combine the oil, vinegar, lemon juice, mustard, garlic, salt and pepper. Cover and shake thoroughly. Chill. Shake again before serving over fresh greens. Makes about 33/4 cup
