Dutch Gouda Cheese Spread

1 1/2 to 1 3/4 pounds of Gouda cheese
mayonnaise
1 1/2 tablespoons of chopped parsley
1 tablespoon of dry white wine
1 1/2 teaspoons of dry mustard
1/4 teaspoon of Worcestershire sauce
1/4 teaspoon of cayenne pepper
dash of onion powder
wheat crackers

Cut a small 'lid' from top of cheese. Scoop out cheese, leaving a thin but sturdy wall 1/4- to 3/8 inch thick. Grate cheese into pea-sized chunks in blender or food processor. Add enough mayonnaise to make a thick but spreadable consistency. Add remaining ingredients and mix well. Spoon mixture back into cheese shell, replace lid and chill. Serve with wheat crackers. Serves 20-24.
