| Cucumber Sauce
2 cucumbers, peeled and seeded 1 teaspoon of salt 1 cup of heavy cream 1/2 cup of sour cream 1 tablespoon of fresh dill weed, chopped 1 tablespoon of fresh parsley, chopped 1 tablespoon of fresh chives, chopped
Grate cucumber and sprinkle with salt. Allow to drain in a colander for 1/2 hour. Beat cream until it begins to stiffen. Fold in sour cream and herbs. Press remaining moisture out of cucumber and fold into cream mixture. Let sit at least 15 minutes to allow flavors to meld. Stir and serve. Makes about 4 cups
