| Salsa de Cilantro
1/2 cup of scallions, chopped 4 tomato, chopped 1/2 cup of cilantro, finely chopped 2 garlic cloves, minced very fine 2 tablespoons of olive oil 1 tablespoon of vinegar 1 tablespoon of lemon juice salt and pepper to taste
Mix oil, vinegar, lemon and garlic. Chop tomato, scallion and cilantro. Pour dressing over veggies and mix well. Refrigerate at least 1 hour before serving so that the flavors can mix. Makes about 3 cups
