| 1st Place Apricot Chutney
1 cup of white sugar 1 cup of brown sugar 1 cup of cider vinegar 1 tablespoon of finely chopped ginger or 3/4 tsp. ground ginger 1 teaspoon of dry mustard 1 dash dried cloves 1 small lime, chopped 3 small dried hot chili peppers, crushed 1/2 cup of chopped onion 1 small garlic, mashed 1 cup of raisins 4 pounds of apricots, pitted and quartered 1 teaspoon of ground allspice
Combine all ingredients except apricots in large pot; bring to a boil, then add apricots. Return to boil. Simmer 45 minutes or until slightly thickened stirring frequently to prevent sticking. Put up in hot sterilized jars and process 10 minutes in boiling water bath. Yields 4 pints.
