| Green Tomato & Apple Chutney
5 cups of green tomatoes, coarsely chopped 3 cups of Granny Smith or pippin apples, peeled, cored, and coarsely chopped 1 large red bell pepper, seeded and coarsely chopped 1/2 cup of raisins 1 tablespoon of fresh ginger finely chopped 3 cloves garlic, finely chopped 1/2 teaspoon of ground cumin 1/2 teaspoon of mustard seed 1 teaspoon of ground coriander 1/8 teaspoon of nutmeg 1/8 teaspoon of cayenne pepper 1/2 cup of brown sugar 1/2 cup of white sugar 1 cup of mild white or rice vinegar
In a large 4 to 5 quart saucepan, combine all ingredients. Bring to a boil and then simmer, stirring occasionally, for about 45 minutes or until mixture is thickened. Let cool, then store in canning jars in refrigerator or heat the jars and process in a hot water bath for 10 minutes for 1/2 pints and 15 minutes for pints. Let chutney mellow for a few days before serving. Makes 5 cups
