Cucumber Relish
2 tablespoons of vinegar 2 tablespoons of water 1 tablespoon of sugar 1/4 teaspoon of salt 1 medium of cucumber 1 small Onion; finely chopped 1 small Red chili pepper; seeded, in chopped
Stir together vinegar water, sugar and salt in a bowl till sugar is dissolved. Peel cucumber and cut in half lengthwise. Scoop out seeds. Thinly slice cucumber. Add cucumber, onion and chili to vinegar mixture. Cover and chill up to 3 hours. Makes 1 cup. NOTES : Holiday Appetizers 1996, Better Homes and Gardens, page 21.
