| Green Tomato Relish
4 quarts of green tomatoes 2 peeled onions 4 large green peppers 2 large red peppers 1/4 cup of salt 1 teaspoon of mixed pickling spices 3 cups of vinegar 1 cup of water 48 packs of Sweet 'N Low or artificial sweetener to equal 2 cups of sugar
Wash vegetables, chop fine, and mix together. Add salt and let stand overnight. Drain off and discard liquid. Add vinegar, water, sweetener to vegetables in large saucepan. Tie spices in bag and place in saucepan with vegetables. Simmer for 30 minutes. Remove spice bag. Ladle boiling hot relish into sterilized jars. Seal. Process in boiling water bath (212ºF.) for 5 minutes. Makes 12 pints
