Low Calorie Country Style Corn Relish
1 envelope of unflavored gelatin 1/2 teaspoon of Sweet n Low (2 packets) 1 cup of water 1/4 cup of white vinegar one 12 ounce can of whole kernel corn, drained, reserve liquid 2 tablespoons of lemon juice 1/4 cup of chopped dill pickle 2 tablespoons of chopped onion 2 drops of hot pepper sauce 1/2 cup of finely chopped pimento
In a medium saucepan, mix gelatin with sweetener. Blend in water. Let stand for 1 minute. Stir over low heat until gelatin is completely dissolved, about 5 minutes. Add vinegar, reserved liquid, juice and hot pepper sauce. Pour into a large bowl and chill, stirring occasionally until mixture is consistency of unbeaten egg whites. Fold in vegetables. Turn into 4 cup mold or bowl. Chill until firm. Makes 6 servings 70 calories Great with barbecued foods.
