| Onion Relish
3 medium onions, finely chopped finely 1 green pepper, seeded, cored and chopped finely 1 tomato, peeled, seeded and diced 1 cucumber, peeled, seeded and diced Tabasco sauce 1 tablespoon of sugar 1 tablespoon of lemon juice 1/3 cup of wine vinegar 2 tablespoons of olive oil
Combine all ingredients and chill at least 1 hour or until serving time. Keeps refrigerated 1 to 2 weeks. Makes 6 servings
