| Pepper Relish
8 green peppers 8 red peppers 4 large onions 3 pints of vinegar 1 tablespoon of salt 1/3 cup of sugar 1 teaspoon of mustard seed
Put peppers and onions through food chopper, cover with boiling water. Let stand 10 minutes, drain peppers and onions. Heat vinegar, salt, sugar and mustard seeds to boiling, add peppers and onions. Simmer for 30 minutes. Place in jars, seal with Paraffin Wax .
Pepper Relish #2
12 red peppers 12 green peppers 2 quarts of onions (3 pounds white) 2 cups of sugar 2 tablespoons of salt 1 quart of vinegar
Chop peppers and onions and cover with boiling water. Let stand 10 minutes. Drain. Cover again with boiling water. Let stand for 15 minutes. Drain. Combine all ingredients and boil 30 minutes. Put in hot jars and seal. Makes 4 to 6 pints.
