| | Basic Brown Sauce
1/4 cup of butter or margarine 1/4 cups of all purpose flour 2 cups of Basic Brown Stock 1/8 teaspoon of salt 1/8 teaspoon of pepper
Melt butter in a medium saucepan; add flour, blending well. Cook, stirring constantly, until mixture has browned. Gradually add Basic Brown Stock; cook over medium heat, stirring constantly until thickened and bubbly. Stir in salt and pepper. Serve sauce hot with roast beef or steak. Yield: about 2 cups |
